The White Angus Ranch, grass-fed and grass-finished flank steak. The flank is lean and flavorful, cut from the flank area below the loin. Because flank is both a thinner and leaner it is best when braised or marinated and grilled quickly over very high heat. Serve medium rare and slice against the grain in thin strips.
